A chef from Dallas heads west to take over the culinary operations of one of the newer hotels in downtown Fort Worth.

AC Hotel Fort Worth Downtown, which opened at 101 W. Fifth St. near Sundance Square last September, announced Javier Maysonet as its executive chef, who comes to Cowtown after a stint as executive sous chef for Dallas / Addison Marriott Quorum by the Galleria. His other previous credits include W Retreat & Spa, Vieques Island and El San Juan Hotel in Puerto Rico, where he was sous chef.

But now that he’s in Fort Worth, he’s going to create a menu that “emphasizes the European soul and Spanish roots of the AC brand,” according to the hotel. You can enjoy dishes like cazuela for breakfast, empanadas, pork carnitas, and paella with chicken and chorizo.

“We are delighted to introduce Executive Chef Maysonet to you,” said Aaron R. Oquendo, general manager of AC Hotel Fort Worth Downtown, in a statement. “Chef Maysonet has an incredible blend of experience, culinary skills and passion. His desire to create exquisite cuisine combined with an excellent customer experience makes him the ideal candidate to deliver on AC’s promise to be a “Perfectly Accurate Hotel” that provides our guests with what they need from their dining experience. .

Maysonet will be in charge of all hotel food and beverage functions, including events and galas. Guests can dine in the AC Kitchen (a European-inspired breakfast spot serving dishes like croissants, prosciutto and sliced cheese and pies) or the AC Lounge (the lobby bar known for its cocktails and its menu of small Spanish-inspired plates).

“I am delighted to take on the management of AC Hotel Fort Worth Downtown,” Maysonet said in a statement. “I believe that our food should bring ultimate pleasure to our guests, and I aspire to create an extraordinary dining experience. From breakfast in the AC Kitchen to cocktails, tapas and entrees in the AC Lounge, I look forward to taking our guests on an unforgettable culinary journey of European-inspired flavors perfectly prepared, poured and served.
